While the yam is boiling, pound crayfish together with pepper. Heat a little oil in a large frying pan, roll the yam balls in the seasoned flour and fry for a few minutes until golden brown. - Break the remaining eggs, add onion, salt and beat. Deep the balls in the egg mix and coat with bread crumbs..
- Fry in hot oil till become golden brown..
Stir in the brown sugar, orange juice, zest and nutmeg. In a separate bowl, toss the coconut with the sugar and cinnamon. Bring a pot of water to a boil. Drain and mash with butter, sugar, milk, salt and lemon zest. Shape mixture into balls, with a marshmallow in the center of each.
