Akara balls(kosai). Akara is a snack that is originally from Nigeria but that has migrated to a number of West African countries as well as Brazil. It is a traditional snack from Nigeria that is also popular in Ghana, Togo, Benin, Mali and The Gambia. It is actually a fried cake or fritter that is a common breakfast staple or fast food.
It also goes by the name Acarajé/ Koose in Ghana or Acarajé in Portuguese. Heat up a deep frying pan or deep fryer with enough oil for deep frying. When the oil is hot enough; using a tablespoon scoop, pour the akara batter in little increments into the oil to fry and form balls. You can cook Akara balls(kosai) using 7 ingredients and 5 steps. Here is how you achieve that.
Ingredients of Akara balls(kosai)
- Prepare of Beans.
- It's of Salt.
- Prepare of Maggi.
- Prepare of Garlic powder.
- Prepare of Onion powder.
- Prepare of Vegetable oil.
- It's of Water.
Fry each ball until golden brown and with a slotted spoon scoop out the cooked balls and drain unto a paper towel to remove the excess oil. Clean the black-eyed peas in running water. Soak them in water for at least a few hours or overnight. After soaking them, rub them together between your hands to remove the skins.
Akara balls(kosai) step by step
- Wash your beans to remove the skin.
- Soak for 15 to 20 mins and blend until smooth.
- Add maggi,salt,onion and garlic powder and use a stick or hand mixer to beat until the batter becomes fluffy.
- Heat oil on medium heat and use a spoon to scoop the batter into the hot oil and fry on both sides until golden.
- Serve with hot pap.
Rinse to wash away the skins and any other debris. Akara (Kosai) is one of the popular street foods sold by the roadside traders in the morning and during the evening hours alongside with fried yam, potato chips and plantain chips. The common ways to enjoy akara balls is to pair with custard, pap (ogi), and agege bread; most times, we even enjoy akara with some spicy pepper sauce. STEPS FOR MAKING GOOD AKARA BALLS AT HOME: The washed beans is grinded together with onions, pepper crayfish and some water. If using a manual grinder, there is no need for water until after grinding.
