Idli chutney sambar. Idli Sambar Chutney Classic southie breakfast ready in an hour. Best served with filter coffee and morning newspapers. I have seen in most of non-Konkani homes, idli is usually served with both sambar and chutney.
To make the sambar you always start with boiling your dal with some turmeric powder and salt. Once you are done boiling, in a separate pan take some oil and heat it. For the tempering, you need some mustard seeds, cumin seeds, curry leaves, chana dal, and some urad dal with some Red chillies. You can cook Idli chutney sambar using 34 ingredients and 10 steps. Here is how you cook it.
Ingredients of Idli chutney sambar
- It's of Batter.
- Prepare 2 cup of idli rawa.
- You need 3/4 cup of urad dal.
- Prepare 1/4 cup of flatnned rice.
- Prepare of Sambhar.
- It's 3/4 cup of tur dal.
- It's 1/4 cup of masoor/moong dal.
- It's to taste of Salt.
- Prepare 1/4 cup of tamrind water.
- It's 2 tbsp of jaggery.
- Prepare 2 tbsp of sambhar masala.
- Prepare 1 tsp of red chilli powder.
- Prepare 1/4 tsp of haldi/ Turmeric powder.
- It's 2-3 of dry red chillies.
- You need 2 tsp of Curry leaves.
- Prepare 1 of onion chopped.
- It's 1 of tomato chopped.
- It's 1/2 cup of bottle gourd/Madras cucumber pieces.
- Prepare 2 of drumsticks cut to 3" piecesl.
- You need of Chutney.
- You need 1 cup of fresh coconut pieces.
- Prepare 1 tbsp of roasted chana dal(futana dal).
- Prepare 1/2 tsp of sugar.
- It's 1 inch of ginger.
- It's 2 of green chillies.
- You need to taste of Salt.
- It's 1/4 tsp of Jeera/cumin seeds.
- Prepare 1/2 tsp of lemon juice.
- Prepare of Tadka.
- Prepare 2 tsp of Oil for tadka.
- It's 1 tsp of Mustard seeds.
- You need 1/2 tsp of Cumin seeds.
- It's pinch of Hing/ asafoetida.
- Prepare 2 tsp of Curry leaves.
Then, gently unmould the idlis with the help of a spoon and serve hot with chutney and sambar. Apply oil in the idli stand to avoid sticking of idli and fill the idli mould with the batter. Put the idli stand inside and close the lid. Put the idli stand inside and close the lid.
Idli chutney sambar step by step
- Soak idli rawa and urad dal seperately for 8 hours. Soak flattened rice for 15 mins. Rinse and Grind only dal and flattened rice to smooth paste.
- Squeeze rawa and mix with dal and flattened rice batter and keep aside to ferment for 8 hours in warm place. It will puff up.
- Grease idli stand and add salt to batter and little water and pour in stands..
- Steam for 20 mins on medium flame..
- Sambar- cook dal for 3 whistles. Whisk add tamrind water, salt, water, jaggery, sambar masala and keep aside..
- In a vessel cook with water onions, tomatoes, bottle gourd, drumsticks with little salt. till completely cooked. Add them to the dal.
- Mix well and cook on medium flame. Take tadka pan addvoil, Mustard, cumin, curry leaves, red chillies, red chilli powder and pour over sambar.
- Bring to boil and serve.
- Chutney- grind everything with little water to smooth paste. Take tadka pan add oil, mustrd, cumin, curry leaves, hing and pour over chutney..
