Recipe: Yummy Veg Paneer Bhurji

Veg Paneer Bhurji. Besides paneer bhurji, egg bhurji is also quite popular and served in most North Indian dhabas (road side eateries). In Punjabi homes, they also make Mooli Bhurji with grated or chopped white radish roots. For a vegan version of the bhurji, use firm tofu instead of paneer.

Ingredients of Veg Paneer Bhurji

  1. You need of Paneer.
  2. You need of Green Bell pepper, tomatoes and onions each.
  3. Prepare of Oil for tadka.
  4. You need of Cumin seeds, 1bay leaf and 1red dry chilli.
  5. It's of green chilli paste.
  6. It's of turmeric powder, 1tsp red chilli powder, coriander powder.
  7. Prepare of garam masala, salt to taste.
  8. Prepare of as required Kasuri methi and coriander.

So adding some vegetables along with this dish gave some extra quantity without changing the original taste. This was mentioned by my friend Gayathri, who tried this dish after seeing my post. Both the ingredients are low in calories as well. Spinach is something that the kids may not like on its own.

Veg Paneer Bhurji step by step

  1. For Paneer : Take 1litre full fat milk let one boil come to it and add 1tsp vinegar or 1/2fresh lemon juice mixing with normal water, wash the paneer and tie it down on one cotton cloth, after 15-20mins it nicely comes out.. Veg Paneer Bhurji
  2. For Dry Gravy :Finely chop all the vegetables. Take a kadhai for frying in that add oil, Cumin seeds, bay leaf and red dry chilli, later on saute onions first and then bell pepper and tomatoes until they softens.
  3. Cover the lid and saute for 5mins or so...
  4. Add all spices to the Veggies and leave it for 2-3 minutes until it releases oil from them.
  5. Lastly add Scrambledpaneer and mix it up and add some Kasuri methi crushing with your palm..
  6. Garnish with some Coriander leaves Now its ready to serve the Bhurji with Roti or Paratha.
