Idli chutney sambar. I have seen in most of non-Konkani homes, idli is usually served with both sambar and chutney. But in Konkani homes (atleast in those which I have seen), it is served either with sambar or chutney. At my home, aayi would prepare both to keep the house calm.
When it does, add the rest of the mustard seed and wait while they pop. Then, gently unmould the idlis with the help of a spoon and serve hot with chutney and sambar. The alteration mainly lies within the sambar and the chutney. You can cook Idli chutney sambar using 34 ingredients and 10 steps. Here is how you cook that.
Ingredients of Idli chutney sambar
- You need of Batter.
- It's of idli rawa.
- You need of urad dal.
- You need of flatnned rice.
- It's of Sambhar.
- You need of tur dal.
- Prepare of masoor/moong dal.
- You need of Salt.
- It's of tamrind water.
- It's of jaggery.
- You need of sambhar masala.
- It's of red chilli powder.
- You need of haldi/ Turmeric powder.
- You need of dry red chillies.
- Prepare of Curry leaves.
- It's of onion chopped.
- You need of tomato chopped.
- You need of bottle gourd/Madras cucumber pieces.
- Prepare of drumsticks cut to 3" piecesl.
- Prepare of Chutney.
- Prepare of fresh coconut pieces.
- It's of roasted chana dal(futana dal).
- Prepare of sugar.
- Prepare of ginger.
- Prepare of green chillies.
- It's of Salt.
- Prepare of Jeera/cumin seeds.
- It's of lemon juice.
- You need of Tadka.
- You need of Oil for tadka.
- Prepare of Mustard seeds.
- You need of Cumin seeds.
- It's of Hing/ asafoetida.
- Prepare of Curry leaves.
The idlis are made using a traditional recipe and is made just the way they made anywhere else in South India. Apply oil in the idli stand to avoid sticking of idli and fill the idli mould with the batter. Put the idli stand inside and close the lid. Put the idli stand inside and close the lid.
Idli chutney sambar instructions
- Soak idli rawa and urad dal seperately for 8 hours. Soak flattened rice for 15 mins. Rinse and Grind only dal and flattened rice to smooth paste.
- Squeeze rawa and mix with dal and flattened rice batter and keep aside to ferment for 8 hours in warm place. It will puff up.
- Grease idli stand and add salt to batter and little water and pour in stands..
- Steam for 20 mins on medium flame..
- Sambar- cook dal for 3 whistles. Whisk add tamrind water, salt, water, jaggery, sambar masala and keep aside..
- In a vessel cook with water onions, tomatoes, bottle gourd, drumsticks with little salt. till completely cooked. Add them to the dal.
- Mix well and cook on medium flame. Take tadka pan addvoil, Mustard, cumin, curry leaves, red chillies, red chilli powder and pour over sambar.
- Bring to boil and serve.
- Chutney- grind everything with little water to smooth paste. Take tadka pan add oil, mustrd, cumin, curry leaves, hing and pour over chutney..
- Ready to serve.
